Are you a vegan and looking for a perfect homemade Mayo which is healthy too?? Here is the recipe for my super healthy & quick avocado Mayonnaise.  Avocado Aioli is deliciously creamy, smooth and full of flavor. This aioli is vegan, oil-free, gluten-free and soy-free. Avocado Garlic Aioli Sauce is so tasty and addictive, yet healthy. You can serve it as a dip with fresh veggie/baked crackers or as a sauce over smashed potatoes or as a sandwich spread. This avocado aioli can even brighten up a boring salad by add few tablespoons of this Avocado aioli dressing. Once you try this you will never buy any dressings or dip or mayo from stores which are loaded with preservatives.

Ingredients

  • 2 – Ripe Avocado, halved and pitted
  • 1- Garlic Clove
  • ½ tablespoon – Fresh Lemon Juice
  • ½ teaspoon – Mustard sauce (Optional)
  • 2 tablespoon – Almond or Coconut milk  (Optional, for smooth and creamy texture)
  • 1 tablespoon – Basil leaf or Coriander leaf, washed and roughly chopped
  • 1 teaspoon – Freshly ground black pepper to taste
  • Sea Salt to taste

Method

Step 1

In a food processor or a blender, add above mentioned ingredients and process until smooth, scraping down the bowl as needed

Step 2

Taste this smooth aioli to adjust salt and pepper. Also, adjust the consistency of avocado aioli now, if it is too thick as ½ tablespoon (as required) of vegan milk and blend well.

Step 3

Serve it fresh over a toast or as a sandwich spread or dip. Refrigerate leftover aioli for later use



Notes

  • Spicy: Add Paprika, Jalapenos and Chopped onion to add up the spice
  • Oil-Based: Add Olive Oil and homemade Mayo instead of milk
